Cheese elaborated from raw milk of sheep, following the handmade and traditional methods, contributing besides the maxima taken care to obtain a texture, aromas and peculiar flavours.
His skin is hard, of colour pardo, with the drawing of the pleita very marked and clear-cut. Natural skin, bathed with oil of olive during his maduration. The paste is firm and compact, of white colour, being able to present eyes of small size-average, delivered by all the cut. His texture is very mantecosa and very soft. The aroma corresponds to milk of sheep matured with a soft retrogusto in which they appear light touch of acidity.
Curing between 2 and 3,5 months.
