Idiazabal Pastor Smoked Cheese : 1,2 kg

The cheeses Idiazabal of Pastor, elaborate by an association of producers of Álava, Biscay, Guipuzkoa and Navarra. They use the traditional technicians combined with the new technologies. 

Elaborates with raw milk of sheep of the autochthonous races Latxa and Karrantzana, with a taken care feeding that gives place to milk of excellent quality and to a magnify cheese. 

In concrete the sheep Latxa produces a quantity of milk very limited, roughly 100 litres by season.
