The line that appears in this cheese is ash. In the past it elaborated with cuajada excess of other cheeses. The cuajada of the first day conserved covered with a layer of ash until it incorporated the one of the following day. At present, the ash adds like decoration.
In that period, elaborated in the farms of the Swear, in winter. At present, the majority is industrial and proceeds of a same game of milk; the ash adds like decoration.
